The Coravin System

Clement Restaurant at The Peninsula New York, is the first restaurant in New York City to offer every single wine on its extensive list by the glass. Thanks to a new technology called The Coravin System, guests will now have the unprecedented ability to select a single glass of wine from any bottle on the entire menu as it makes it possible to pour without opening the bottle. This innovative tool comes to Clement as part of the continued revitalization of the wine program, led by newly appointed Wine Director Jared Fischer. “We are very excited about the wine collection we have pulled together from around the world and want every bottle to be available to our guests. I am thrilled that Coravin will allow us to make that offering,” says Fischer. “New York has so many great wine programs and so many people who are passionate about wine. I wanted to bring them something truly unique.”

The Coravin System allows wine to be poured by the glass without uncorking the bottle by inserting a hollow needle through the foil and cork, pressurizing the bottle with inert argon gas (to prevent oxidization), and serving the desired amount. When the needle is removed, the cork reseals itself. The remaining wine never comes in contact with oxygen, and continues to evolve naturally, as if it were never opened. The Coravin System can effectively preserve a bottle of wine for months on end.

Fischer has dedicated himself to crafting a wine list that features not only an impressive top-tier selection, but also a robust collection of classic favorites and even some esoteric and exciting wines that he has discovered throughout his travels. His 25-page wine list pulls from regions all over the world and features bottles rarely offered by the glass such as the 2004 Vega Sicilia Valbuena,  a Spanish Tempranillo (US$ 128) and the 2004 Château Léoville-Barton Saint-Julien, a Cabernet Sauvignon from Bordeaux (US$ 87). The Coravin System uniquely offers this full range to wine connoisseurs, single diners such as business travelers and anyone else who desires the opportunity to sample a label without investing in the whole bottle or having their selection limited by a small, by-the-glass list.
